{Super Simple} Sweet Potato Soup Recipe

Threw together some sweet potato soup -- SO easy and I totally made it up as I went. (Anyone else cook this way? I'm not much of a recipe follower😬)

Anyway, if you're curious, here is what I used...

SUPER SIMPLE SWEET POTATO SOUP

INGREDIENTS:

Sweet Onion {1 small}
Sweet Potatoes {3}
Carrots {2}
Celery {2 stalks}
Vegetable Broth {~3 cups}

Seasonings: garlic, salt, pepper

DIRECTIONS:

✖️Dice all veggies and put all the ingredients (minus the seasonings) in a pot. Add water to cover the veggies by about 1 inch. Cook until all veggies are soft.

✖️Use an immersion blender to blend it all up until creamy. Add salt, pepper and garlic to taste.

Top with croutons, if you want!  ❤️
